We place a weekly order with the dairy in France - every Sunday - for delivery to us the following weekend. Therefore the day you place your order will determine how long it takes for us to despatch from here.
Cutting cheeses to specific sizes is not guaranteed. If the cheeses are differing in size to the average described here we will either invoice or refund the difference.
The Ossau-Iraty, the most famous sheep cheese of the Basque Country in the Pyrenees region of France. It has an orange-beige crust, patinated with slightly convex heel. Its paste, pearly white is smooth with tiny openings. The flavour of Ossau-Iraty is very fine, fruity notes displaying perfectly the delicacy of sheep's milk.

This well-known Pyrenean cheese, was in the fourteenth century, the currency of the local shepherds. It originates in the grassland areas of the Ossau valley in Barn and the Iraty massif in the Basque Country.
Ossau-Iraty, traditionally made in mountain huts called "Cayolars", is then entrusted to cheese caves of the region who provide care, quietly, gently for 4 to 6 months.
Ossau-Iraty is a tomme of sheep with a diameter of 26 cm and a thickness of 15 cm. A whole cheese weighs about 4.8 kg. The tradition is to consume with black cherry jam or quince paste - but this isn't compulsory!
Ossau-Iraty has been a PDO since 1980.
