Near Albi, a beautiful, vibrant area in the South West of France, Mr and Mrs Teoski make ewe’s milk cheeses on their farm.
Their animals graze on rich pastures in the summer, and are fed local fodder and hay in the winter, producing a milk of the highest quality.
This delicate raw ewe’s milk cheese is matured for 3 to 4 weeks, allowing it to become creamier beneath its thin natural rind. The flavours are fresh, lightly sweet, with a hint of dried fruits, while its beautifully creamy texture is sure to be a crowd-pleaser.
