These olives are tree ripened until they turn dark purple. They are then harvested, debittered in spring water from the Taygheto mountains and are never heated.
They are marinated in extra virgin olive oil that also raw and is extracted below 27°c.

RAW VEGAN ROSEMARY TAPENADE
330g Jar of RAW Organic Kalamata Olives
30g Fresh basil, chopped
1 tbsp. Fresh rosemary, minced
1 Clove garlic
2 tbsp. lemon juice
Pinch of salt & pepper
Place all of the ingredients in a food processor and mix on high speed until you reach a slightly chunky but thoroughly blended consistency.
