Raw, unpasteurised Gouda cheese, traditionally made in Holland with raw, unheated cow's milk.
The cows that produce the milk for this cheese are fed pasture throughout the summer with the addition of hay in the winter. If for any reason a cow is poorly and in need of anti-biotic treatment they are taken out of the milking until they are well and off any medication before they return to the milking herd.
