Unpasteurised goat´s milk (96.7%), lactic ferments (1.8%), Ile de Ré fleur de sel (1.3%), animal rennet (0.2%)
This raw goat's milk cheese's name translates as "Salt Marsh Flower" and has a very thin ivory crust, slightly moist, which can become a little wrinkled and drier as it refines itself. Its dough is white, smooth and tight. There is a very pleasant slight salty flavour to the outside of the cheese.
