HOW TO COOK VEGETABLES: SALT WATER OR FRESH WATER?

Le Guérandais advises you to adapt your type of cooking to your vegetables. In fact, not all vegetables are cooked the same way! Use water salted with coarse grey Le Guerande sea salt to cook all your fresh vegetables. Thus, they will absorb the salt when cooking in water and will be perfect seasoned.  Conversely, it is better to use fresh water to cook beans and pulses, and add salt after cooking. Indeed, salt tends to slow down the cooking of pulses because it hardens their skin. You can salt with Le Guerande Fleur de Sel, at your convenience, once the pulses are cooked.
